It's our firm opinion at FICKS that each of these is just a little better with a cocktail in your hand, so we wanted to give you one of our favorite simple syrup recipes of the summer to make sure you were making this a true hot-you summer.
This simple syrup only takes about 10 minutes to make, and will last in your fridge for up to a month!
We wanted to create a summer cocktail ingredient that was literally dripping in summer vibes. So we did a quick yet passionate random word association game at the FICKS Cocktail Mix office, and the group overwhelmingly voiced pineapple as a worthy representative of all things summer cocktails. We were off to the races.
But we didn't just want one specific cocktail. That gets too repetitive after two or three summer barbeque cocktail parties. We needed something that not only screamed "Drink this cocktail in the summer!" but was also super versatile for cocktails and non-alcoholic drinks alike.
So without further ado, we give to you and your cocktail mixing crew, the pineapple simple syrup.

What you're going to need to make this pineapple simple syrup for your summer cocktails are pineapples, Tajin, sugar, and lime.
Pineapples are a Staple of Summer Cocktails
Nothing says perfect summer cocktails line pineapples. I mean, pina coladas, anyone? They're sweet, juicy, and have a unique flavor that can really make a summer drink special. And while you can definitely just add fresh pineapple to your cocktails, we think it's worth taking the extra step to create a pineapple simple syrup for your summer cocktail recipes. This way you can control the sweetness and flavor of your drinks, from a light hint of pineapple, to feeling like you're drinking Spongebob's home.
What is Tajin, and How Do I Use Tajin?
We'll be adding a dash of tajin spice to this simple syrup recipe to provide a savory citrusy compliment to the sweet pineapples and sugar. What is Tajin? Tajin is a Mexican seasoning that's typically made with chili peppers, lime and salt. It's often used as a condiment for savory dishes, but we think it works just as well in sweet cocktails. If you can't find Tajin at your local grocery store, don't worry - any chili-lime seasoning will work. We like the Trader Joe's chili-lime seasoning as a backup.
What Type of Sugar Do You Use in Simple Syrup for Drinks?
The key ingredient in all simple syrups, we recommend getting a quality cane sugar for any simple syrup you're making for your cocktail mix. Not only does it dissolve more easily than granulated sugar, but it also has a richer flavor that comes through in your final drink.
What's the difference between cane sugar and granulated sugar? Well, cane sugar is always made from sugar cane while granulated sugar is made from either beet sugar or sugar cane. Cane sugar is also less processed, so we prefer cane sugar in recipes like simple syrup when sugar is such a huge part of the cocktail recipe.

Pineapple Simple Syrup Recipe
Now that you know everything about this simple syrup's ingredients, follow the recipe below to look like an absolute cocktail savant at your next summer cocktail party!
Ingredients
- 1 cup sugar
- 1 cup water
- 1/2 cup pineapple chunks
- 1 tbsp Tajin spice
- 1 lime wedge
Recipe
1. Pour the water, sugar, pineapple, and Tajin spice into a saucepan
2. Simmer over low heat for 10 minutes, stirring regularly until the syrup has taken on a golden color and the pineapple chunks are falling apart.
3. Take the pan off the heat, and squeeze the juice from the lime wedge into the pan. Stir, and let cool for 5 minutes.
4. Strain into a container, and store in the refrigerator for up to a month!
